COROLASE® 2TS is a liquid-formulated, bacterial endopeptidase (metalloprotease) enzyme preparation for hydrolyzing high-molecular-weight proteins into low-molecular-weight peptides. This product is characterized by its ability to hydrolyze a broad range of substrates, ideally at a neutral pH.
COROLASE® 2TS is characterized by its ability to hydrolyze a broad range of substrates, preferably around a neutral pH. It is ideally suited for (food-grade) protein hydrolysis applications in which pH adjustment is either unfeasible or unnecessary. Due to its excellent thermostability, COROLASE® 2TS can be used at reaction temperatures of up to 75°C. COROLASE® 2TS may be used either as a single enzyme or in combination with other proteases or enzyme activities.
COROLASE® 2TS is used for the hydrolysis of proteins from several sources. Typical applications include the production of hydrolysates of wheat gluten, soya protein, gelatin, and milk proteins, and the upgrade of fish protein from byproducts. COROLASE® 2TS is used either as a single enzyme or in combination with other proteases.
