COROLASE® 7089 is a liquid-formulated, bacterial endopeptidase (metalloprotease and serine protease) enzyme preparation for hydrolyzing high-molecular-weight proteins into low-molecular-weight peptides. This product is characterized by its ability to hydrolyze a broad range of substrates, ideally at a neutral pH. Typical protein substrates include casein, whey, meat, fish, soy, gelatin, and some grain types.
COROLASE® 7089 is characterized by its ability to hydrolyze a broad range of substrates, preferably around a neutral pH. It is ideally suited for (food-grade) protein hydrolysis applications in which pH adjustment is either unfeasible or unnecessary. COROLASE® 7089 may be used either as a single enzyme or in combination with other proteases or enzyme activities.
COROLASE® 7089 is used for the hydrolysis of proteins from several sources. Typical applications include the production of hydrolysates of wheat gluten, soya protein, gelatin, and milk proteins, and the upgrade of fish protein from byproducts. COROLASE® 7089 is used either as a single enzyme or in combination with other proteases.
